Two-Ingredient Gluten Free Oat Cookies

Our Two-Ingredient Holy Crap Plus Gluten Free Oats breakfast cookies have a satisfying chewiness. The natural sweetness comes from the bananas and the organic dried fruit and maple flakes in the cereal. There isn't an easier cookie recipe to make and bake.

Ingredients for 24 cookies (1 serving = 3 cookies)


  1. Preheat the oven to 350F (175C). Line a baking sheet with parchment paper.
  2. Mash the bananas in a large bowl. Stir in the oats and let the batter sit for 5 minutes. Stir again.
  3. Drop tablespoonfuls of the batter onto the baking sheet and bake for 11 to 13 minutes. Turn off the oven, open the oven door and allow the cookies to cool in the oven for 20 minutes. The cookies will keep refrigerated in an airtight container for several days. They freeze well, too.

Tip: For a special treat, melt some vegan dark chocolate in the top of a double boiler (or a stainless steel bowl inside a metal colander over a saucepan of water on low heat), allow to cool slightly, then use the tines of a fork to drizzle the melted chocolate over the cooled cookies.
