And because they’re made from whole foods, they’re much more nutritious than store-bought muffins—even with the lemon glaze.\nMake an extra batch of these high-energy muffins and freeze them in resealable containers so you always have some on hand. Serve them with a cup of tea or coffee.Makes: 18 small muffins\nIngredients\n\n2½ cups (600 mL) ground almonds (or almond flour)\n½ tsp (2.5 mL) baking soda\n½ tsp (2.5 mL) gluten-free baking powder\n¼ tsp (1 mL) salt\n1½ tsp (7.5 mL) cinnamon\n½ cup (120 mL\/90 g) Skinny B cereal\n½ tsp (2.5 mL) vanilla extract\n½ cup (120 mL) honey\n3 eggs\n1½ cups (350 mL) fresh or frozen cranberries + a few extra for garnish\n\nDirections\n\nPreheat the oven to 325F (160C). Line 18 medium muffin cups with paper liners.\nIn a bowl, combine the ground almonds (or almond flour), baking soda, baking powder, salt and cinnamon.\nIn a separate bowl, whisk together the Skinny B cereal, vanilla, honey and eggs until well combined and let sit for 5 minutes, then whisk again. Add the dry ingredients and mix well. Stir in the cranberries until evenly mixed.\nFill each cup full and bake for 20 to 23 minutes. Cool on a baking rack, then remove the paper liners, drizzle with the lemon glaze and garnish with cranberries before serving.
