We've paired another superfood, rhubarb, with Holy Crap Apple Cinnamon cereal for a tangy breakfast treat. Rhubarb is low in carbs, high in vitamin C, fibre, and potassium. Look for rhubarb at your local farmers market.

Rhubarb Puree Ingredients
🥣 2 stalks of rhubarb cut into 1-inch pieces
🥣 ¼ cup water
🥣 Honey or maple syrup for sweetness (optional)
Rhubarb Parfait Ingredients
🍨 ½ cup lemon yogurt (or flavour of your choice)
🍨 2 Tbsp Holy Crap Apple Cinnamon
🍨 ½ cup rhubarb puree
Rhubarb Puree Directions
▶︎ Heat rhubarb and water in a small saucepan over medium heat until bubbling, reduce heat to low
▶︎ Cook until soft, about 10 – 12 minutes
▶︎ Add optional sweetener to taste
▶︎ Cool completely before using in parfait
Rhubarb Parfait Directions
▶︎ Layer a glass beginning with half of the yogurt, Apple Cinnamon cereal, rhubarb puree and end with remaining yogurt. Garnish with the reserved rhubarb puree and edible flowers.
▶︎ To eat, stir to mix the cereal with the yogurt and wait a few minutes for the cereal to soften.
